Punch-down Fermenter
"Wineficator Romat"

The “Wineficator Romat” is a punch-down fermenter designed to make pigéage easy.

A three-blade impeller suppressor breaks up and submerges the pomace cap, extracting color, tannins, flavor and aromas from the marc. A special mechanism rotates the suppressor blades for 20° on each press.

The HELI rotating sprinkler evenly soaks the pomace cap in the tank, while a built-in sieve separates the solid substance from the liquid. Pneumatic devices send bubbles from the bottom of the tank, delicately agitating and mixing the liquid.

Rotating paddles at the bottom of the punch-down wine fermentation tank are activated to fully unload the pomace from the vessel. 

A programmable, touchscreen control panel serves as a suppressor, temperature and pump regulator, allowing you to automatize the entire process.

The large, dimpled jacket makes sure the temperature inside the punch-down fermenter is always optimal. Thanks to the vertical construction of the cooling jacket, the stored liquids will be efficiently chilled even if the tank is not full to the brim.

Durable, high-quality materials enable the wine fermentation tank to stay in pristine condition, even after years of professional usage.

AISI 304

The punch-down fermenter is made out of AISI 304 quality stainless steel. An upgrade to AISI 316L stainless steel is available for high-corrosion environments.

Marbled Finish

A high-polish, marbled finish is applied to the outside of the punch-down fermentation tank. Matte and Scotch Brite finishes are also available upon request. The inside is BA (IIId) polished.

Sloped Bottom

The punch-down wine fermentation tank comes with a flat, sloped bottom. Paired with the large, rectangular door, the discharge of the sloped tank is made easy.

Rounded Head

A rounded head comes standard with all punch-down fermenters. The head is specially altered to fit the large suppressor casing in the middle. The manhole is located off-center.

Pneumatic Suppressor

The punch-down fermenter features a three-blade suppressor mounted to a pneumatic cylinder. The suppressor breaks up the pomace cap and rotates for 20° each press.

Rotating Sprinkler

The rotating HELI sprinkler is mounted on the pump-over fermenter's head. It efficiently soaks the entire layer of pomace in the wine tank.

Impulse Mixing

Pneumatic devices are located on the bottom of the tank. They send short bursts of air, creating bubbles. The bubbles rise to the top, delicately mixing the liquid in the vessel.

Control Panel

The pump-over wine fermentation tank comes with a programmable, touchscreen control panel. It regulates the pump and temperature inside the tank, allowing you to automatize the entire process.

Pomace Discharge

The rotating blades mounted to the bottom of the wine fermentation tank gently push the leftover pomace out of the rectangular doors, automatizing discharge.

Stacking Technology

3) You approve the plans.

You sign the final version of the drawing and email it to us. We then schedule the tank for manufacture. You still have some time for making small changes.

4) We manufacture it.

Your final tank design enters the production line. It is assembled from high-grade stainless steel using advanced welding techniques.

5) You take delivery.

Your tank is shipped out to you, including a manual and proper maintenance guide. We'll always be there for you to provide assistance.
